Preheat oven to 350°F.
In a mixing bowl, whisk flour mixture, cocoa powder, baking soda, and salt.
In the bowl of a stand mixer, cream butter and sugar with a paddle attachment.
Add eggs and vanilla extract.
Add the flour mixture gradually and mix until combined
.Drop rounded dough onto a prepared baking sheet.
Bake for 10-12 minutes and let cool completely.
Spread the ice cream onto one cookie, then press another cookie on top.
Freeze for a minimum of 2 hours.
Wrap each sandwich in plastic wrap and return to the freezer.
